These chicken nuggets are quick to prepare using your Thrive ingredients and have a great, mild flavor that kids will love. Best of all - they are actually healthy! If you would prefer a more "chickeny" chicken nugget, you could reduce or omit the potato beads and add a little more whole egg powder. Making the recipe as it is listed here will make nuggets that are similar to crab cakes - smooth and tender.<br />

Combine chicken, celery, onions and 1/2c hot water in the bowl of a small food chopper. Pulse a few times to chop chicken into small pieces, then let the mixture rest for 5 minutes. Empty chicken mixture into a small bowl and add the rest of the hot water, potato beads, egg powder and salt. Mix thoroughly, then shape into 6 nuggets. Put the pancake mix or bread crumbs in a shallow bowl. Dip each nugget into the crumbs, pressing gently to help the crumbs stick to the nugget.<br />

Heat a small amount of oil (several tablespoons) in a skillet. Pan fry the nuggets until golden brown on each side. Allow to cool slightly before serving.<br />

* The coarseness of the bread crumbs will determine how crispy the outer coating of your nugget is. If you prefer a thick, crispy coating, try using Panko breadcrumbs. Put the chicken breasts (you could also use thighs) in a medium sized crock pot. Put freeze dried berries in a zip top bag and smash them with a mallet until they are powdered. In a bowl, combine berry powder and remaining ingredients and stir until a thick sauce forms. Pour sauce over chicken and stir to coat. Cover and cook on low 6-8 hours. Remove chicken, shred, and return to sauce. Stir well to coat. Serve shredded chicken on warmed rolls.<br />

In a large pot, bring water to a boil. Add black beans, taco TVP, corn, onions, celery, sweet potatoes and seasonings.<br />

At this point I decided to add a can of petite diced tomatoes and a small can of diced green chiles. Yeah, I know, it's not in the pictures. It was a last minute decision :) You could also throw in a can of jalapenos - maybe even a diced zucchini. That would be really good. Now I wish I had a zucchini.<br />
<br />
Reduce the heat and let everything simmer for about an hour, stirring occasionally. After about an hour, give it a taste and adjust the seasonings at your discretion. I like my soup to have a nice kick to it, but feel free to add more or less seasonings to suit your taste. Garnish with shredded cheese, sour cream, tortilla chips and/or salsa before serving.<br />

1 can Cream of Chicken with Mushrooms (feel free to use cream of whatever you have!)<br />

Combine everything but the cream soup in a large pot and bring to a boil. Reduce the heat, cover and simmer for at least 30 minutes or until the rice is tender. Reduce the heat a little more before adding the cream soup and stir frequently so it doesn't boil (boiled cream soup = curdled cream. Ick!). Cook for 5 minutes or until heated through, the taste it and adjust the seasonings to your liking.<br />

The Verdict: this soup was delicious! The vegetables had a great texture and the wild rice added a gentle nutty flavor. The addition of an Italian herb mix was perfect, but you could take this soup in a completely different direction by changing up the seasonings just a little. Annika finished her bowl without complaint (a rare occasion in this house - who knew pleasing a 5 year old palate could be so difficult) and the hubby declared it a "definite do over". Preheat oven to 350 and grease mini muffin tins. In a bowl, combine brownie mix, pancake mix and milk. In a seperate bowl, combine strawberries, macaroon cookie mix and water. Fill each muffin cup halfway with brownie batter, then put about a teaspoon of the cookie mix in the middle. Bake at 350 for 15 minutes. Cool before frosting.<br />

Refrigerate in an airtight container for one week or freeze for up to 6 months.<br />

Once you have completed the spreadsheet, print out a copy and have your child make her choices by writing the initial for each day of the week next to the item she would like. So, if she would like grapes for her morning snack on Monday, she would put a "M" next to the word grapes on the list. Granola bites would have a "Th" next to it for Thursday. Repeat for all remaining categories.<br />

I have my daughter complete her "lunch order" on Saturday for the upcoming week. This allows me to prepare anything that can be made ahead of time like muffins or granola, pick up the produce needed at the store, and also plan our family dinners accordingly. Puree sweet potatoes and apples with a stick blender (or carefully transfer them to a standard blender), then stir in remaining wet ingredients. Set aside to cool.<br />

In a small sauce pan, combine honey, butter, oil and vanilla. If you are going to use peanut butter (or another nut butter) add it at this step. Heat the mixture on medium heat until simmering and frothy. Continue to cook the honey, stirring frequently, until the froth has disappeared. This is a very important step - if you don't cook the honey long enough, your granola bars will fall apart later!<br />
<br />
While your honey is heating, combine the remaining ingredients and your choice of mix ins. Stir all of the dry ingredients together, then pour the honey mixture over the top. Mix very well and press firmly into a 9x13 pan. Bake at 350 degrees for 10 minutes. Cool completely before cutting into bars or squares. Dissolve sugar and yeast in warm water and set aside to proof for 5 minutes. While yeast is proofing, melt the butter or oil and allow to rest on counter. Combine flour, egg powder and salt. Add milk mixutre and oil or butter and stir. When the dough becomes too thick to mix, turn it out onto a floured counter and knead for 5 minutes. Cover with a damp towel to rest. Preheat oven to 350.<br />

2c Thrive Macaroon Cookie Mix<br />
1/4c Hot Water<br />
<br />
Combine cookie mix and water and mix well. The mixture should be fairly moist - add additional hot water if necessary. Allow mixture to rest for 5 minutes.<br />
<br />
Roll out the dough to make a long rectangle. Spread the macaroon cookie mixture, leaving about 1" dry all the way around the dough. Sprinkle cookie mix with toppings if you would like to - white chocolate chips, cinnamon, chopped nuts or even sprinkles would all be nice additions. Roll dough to make a long round, then slice into 1-1/2" rounds. Place is greased baking dish and bake at 350 for 30 minutes or until golden brown.<br />

Combine all ingredients and whisk until smooth. The batter should be thin - add additional water if it is too thick. Heat a small skillet over medium high heat until a drop of water sizzles quickly. Melt a small amount of butter in the skillet, then add the batter, slightly less than a quarter of a cup at a time, and turn the pan quickly to spread out the batter into a round pancake shape. Cook until the edges are lightly brown, then flip and cook another 30 seconds. Add more butter every before every second crepe as necessary to prevent them from sticking. Cover the cooked crepes with a damp paper towel to prevent them from drying out. Makes 8-10 crepes. Your cooked crepes can be refrigerated for 3-4 days in a ziploc bag.<br />

Luckily I wised up in college and realized that I couldn't focus in class if my stomach was growling loud enough to invite stares from anyone sitting within a ten food radius. This isn't to say that my breakfast was healthy by any means. Usually it was leftover pizza, half a candy bar, or whatever baked sugar bomb the coffee cart was selling.<br />

Bacon, eggs and whole wheat toast are favorites, as are whole grain cinnamon rolls (a dusting of powdered sugar instead of frosting) with a side of fruit and milk. After doing a lot of research about the health benefits of whole grains - and better yet, how to get the <i>most </i>benefits from your whole grains by soaking them to "unlock" all of the nutrition - I designed this awesome bowl of warm, hearty goodness. It does require a little bit of planning ahead, but trust me - your body and brain will thank you.<br />

2T Whey (leftover from <a href="http://whyjusteat.blogspot.com/2011/08/homemade-cream-cheese.html">making your own cream cheese</a>)*<br />
2T Thrive Whole Wheat Flour <br />
1c Warm Water<br />
1c Milk<br />
2 to 4t Brown Sugar<br />
Dash Cinnamon<br />

The night before, combine oats and cracked cereal. Add just enough warm water to reach the top of the oats, then stir in whey and whole wheat flour. Leave the mixture on your kitchen counter overnight. In the morning, drain any remaining liquid and discard. Stir in the milk and heat, either in the microwave or on the stove. Add brown sugar and cinnamon before serving.<br />

*If you don't have any whey but still want to soak your grains, you can substitute a tablespoon of plain yogurt or buttermilk. I prefer whey because you can't taste it at all after the cereal is cooked. You can skip the soaking step altogether, but I promise you will notice a difference in not only the flavor of the cereal but also how full/satisfied you feel after eating it!
