Leftover Meal Pockets

When your fridge is full of leftovers, make yourself a batch of these leftover meal pockets. They make a great quick dinner, hot lunch, or throw them in the freezer for another day. One batch of dough, endless possibilities!


For the dough:

1 1/2c Warm Water
1 Packet Yeast
1t Thrive Sugar (white or brown)
3c Thrive Flour (white or whole wheat
1/2t Salt
1T Oil
*Feel free to add seasonings to your dough that will compliment the fillings.

Combine all ingredients and knead for 5 minutes. Cover and let rise for 30 minutes, then divide into 6 large portions or 8 smaller ones.

Choose your fillings - here are a few suggestions! Make sure that all of your Thrive products are rehydrated before you add them to the pockets.

Leftover taco meat (or Thrive Taco TVP and Thrive Instant Pinto Beans)
Leftover spaghetti - pasta and sauce
Leftover lasagna
Leftover casserole (as long as it isn't too saucy)
Lunch meats and cheese
Shredded BBQ Pork, Beef or Chicken
Thrive Ham TVP, Sausage TVP or Sausage Crumbles with Shredded Cheese
Pizza toppings and pizza sauce
Thrive Cooked Ground Beef with Thrive Onions, Thrive Green Peas and brown gravy (pictured above)
Thrive Cooked Ground Beef with Thrive Shredded Cheddar
Thrive Roast Beef Dices with Chopped Onions and Potato Chunks
Thrive Turkey Dices with Mashed Potatoes and Seasonings


Pat each of your dough portions out into circles. Mound your chosen filling on one side, then fold the other side over and seal along the edges. Brush the top of each pocket with egg wash. Bake at 350 degrees for 20 to 25 minutes or until golden brown. These meal pockets can be refrigerated for up to 3 days or frozen for up to 6 months.
