Pumpkin Spice Pancakes

First, an apology. I took a new job about six weeks ago and have been working a ot of hours. I love my job, and I love this blog, and I love my family. Please be patient with me while I get it all figured out :)


This new pancake recipe is a great way to start a lazy weekend morning! Serve them with melted butter and syrup, or make a beautiful pumpkin glaze.

1c Thrive 6 Grain Pancake Mix
2/3c Milk
1/4c Pureed Pumpkin
3T Thrive Brown Sugar
1/4t Pumpkin Pie Spice Mix

Combine all ingredients and mix gently until smooth. Heat a large, greased skillet over medium heat. Use a small ladel to pour batter onto skillet, making 6" rounds. Cook until edges dry, then flip and cook another minute or two. Makes 9 pancakes.

Pumpkin Glaze

1c Thrive Powdered Sugar
1-2T Milk
2t Pureed Pumpkin

Stir until combined and drizzle over cooked pancakes.
