These cute little pies are simple enough for an every day dessert, yet elegant enough to serve after a decadent holiday dinner. Feel free to garnish yours with chopped nuts, toasted coconut or whipped cream.
For the crust:
1-1/2c Thrive 6 Grain Pancake Mix
3T Thrive Butter Powder
3T Thrive Sugar (white or brown)
1/2t Ground Cinnamon
1/2c Water
Grease a 12 cup muffin tin. Combine ingredients and mix until a soft dough forms (if your dough is too dry, add additional water one tablespoon at a time until it is moist). Drop the dough by heaping tablespoon fulls into each cup your muffin tin. Grease your fingers, then gently press the dough onto the bottom and up the sides of each cup to form the crust. Set aside.
For the filling:
2c Thrive Brownie Mix
1/2c Milk
1/2c Thrive FD Raspberries, rehydrated
Garnish: whipped cream, chopped nuts, and/or toasted coconut (optional)
Combine the brownie mix and milk until smooth, then fill each crust with the batter. Place one or two rehydrated raspberries on top of each. Bake in preheated oven for 16-20 minutes or until crust is golden brown. Cool before garnishing.

Pumpkin Cornbread
A simple twist on traditional cornbread - delicious, nutritious and a perfect addition to your fall menu.
1c Thrive 6 Grain Pancake Mix
1c Thrive Cornmeal
1c Milk
1/2c Pumpkin Puree
1/4c Thrive Sugar (white or brown)
2T Thrive Whole Egg Powder
1t Pumpkin Pie Spice
Preheat oven to 400 and grease a 9" pie plate. Combine all ingredients, mixing thoroughly. Pour into greased dish and bake for 25 minutes or until golden brown.

Mini Apple Pie
Ever since I figured out how to make a nice "pie-like" crust using our Thrive 6 Grain Pancake Mix, I just can't get enough of these little pies! This time, apple cinnamon - delish!

Dash Ground Cinnamon
Dash nutmeg
1/2c Water

Combine apples, water, nuts, sugar and cinnamon in a small pot and bring to a boil. Reduce heat and simmer until apples begin to break down and sugar melts into a thick syrup, about 10 minutes. Carefully spoon mixture into crusts and bake in preheated oven for 16-20 minutes or until crust is golden brown.

Cheesy Chicken and Rice with Broccoli
1 5oz Package Yellow/Saffron Rice
1 1/2c Thrive Chopped Chicken
2T Thrive Red & Green Bell Peppers
3c Hot Water
1c Thrive Broccoli Pieces
1-2t Curry Powder (optional)
1c Thrive Shredded Cheddar, rehydrated
Combine rice, chicken, peppers and water in saucepan. Bring to a boil, reduce heat, cover and simmer for 15 minutes. Stir in broccoli and curry powder and simmer for 5 more minutes or until rice is tender. Season as desired (I added salt and pepper), spoon into bowls and top with cheese.
Feel free to add more Thrive vegetables to this dish if you would like! Peas, mushrooms, green beans and corn would all be delicious additions. Just be sure to adjust more water as needed.

Overnight Coconut Cinnamon Oatmeal
This one takes a little planning ahead, but it is oh so worth it. Refrigerating the cooked oats overnight allows them to absorb the extra liquids, turning them into large, pillowy soft oats. This recipe will make one bowl that you won't want to share - so if your husband is going to want some, you'd better double it now!
1/2 Thrive Oats
1 1/2c Water
2T Thrive Instant Milk
2T Thrive Macaroon Mix
Cinnamon
Microwave oats and water in medium bowl for 3 minutes. Stir in instant milk and macaroon mix. Refrigerate overnight. Reheat in the morning and garnish with cinnamon.
Hint: this would make a nice gift! Package the dry ingredients in a cute little celophane bag, top it with a pretty ribbon, and include the instructions on a card attached to it. All the recipient will need to add is water.
