Mini Chocolate Raspberry Pie

These cute little pies are simple enough for an every day dessert, yet elegant enough to serve after a decadent holiday dinner. Feel free to garnish yours with chopped nuts, toasted coconut or whipped cream.


For the crust:
1-1/2c Thrive 6 Grain Pancake Mix
3T Thrive Butter Powder
3T Thrive Sugar (white or brown)
1/2t Ground Cinnamon
1/2c Water

Grease a 12 cup muffin tin. Combine ingredients and mix until a soft dough forms (if your dough is too dry, add additional water one tablespoon at a time until it is moist). Drop the dough by heaping tablespoon fulls into each cup your muffin tin. Grease your fingers, then gently press the dough onto the bottom and up the sides of each cup to form the crust. Set aside.

For the filling:
2c Thrive Brownie Mix
1/2c Milk
1/2c Thrive FD Raspberries, rehydrated

Garnish: whipped cream, chopped nuts, and/or toasted coconut (optional)

Combine the brownie mix and milk until smooth, then fill each crust with the batter. Place one or two rehydrated raspberries on top of each. Bake in preheated oven for 16-20 minutes or until crust is golden brown. Cool before garnishing.

Pumpkin Cornbread

A simple twist on traditional cornbread - delicious, nutritious and a perfect addition to your fall menu.

 1c Thrive 6 Grain Pancake Mix
1c Thrive Cornmeal
1c Milk
1/2c Pumpkin Puree
1/4c Thrive Sugar (white or brown)
2T Thrive Whole Egg Powder
1t Pumpkin Pie Spice

Preheat oven to 400 and grease a 9" pie plate. Combine all ingredients, mixing thoroughly. Pour into greased dish and bake for 25 minutes or until golden brown.

Mini Apple Pie

Ever since I figured out how to make a nice "pie-like" crust using our Thrive 6 Grain Pancake Mix, I just can't get enough of these little pies! This time, apple cinnamon - delish!


For the crust:
1-1/2c Thrive 6 Grain Pancake Mix
3T Thrive Butter Powder
3T Thrive Sugar (white or brown)
Dash Ground Cinnamon
Dash nutmeg
1/2c Water

Grease a 12 cup muffin tin. Combine ingredients and mix until a soft dough forms (if your dough is too dry, add additional water one tablespoon at a time until it is moist). Drop the dough by heaping tablespoon fulls into each cup your muffin tin. Grease your fingers, then gently press the dough onto the bottom and up the sides of each cup to form the crust. Set aside.

For the filling:
2c Thrive Apple Slices
1c Water
1/2c Thrive Sugar (brown or white)
1t Ground Cinnamon
1/4c Chopped Nuts (walnuts or pecans would be great)

Combine apples, water, nuts, sugar and cinnamon in a small pot and bring to a boil. Reduce heat and simmer until apples begin to break down and sugar melts into a thick syrup, about 10 minutes. Carefully spoon mixture into crusts and bake in preheated oven for 16-20 minutes or until crust is golden brown.

Mini Chicken Pot Pies

These cute little pies are easier than they look - which is always a bonus when you are entertaining! They are also quite healthy - white chicken meat, whole grains, yummy veggies and a smooth, homemade cream soup come together to make this dish a hit!


For the biscuit crusts:
1-1/2c Thrive 6 Grain Pancake Mix
3T Thrive Butter Powder
1/2c Cold Water
1/2t Italian Seasonings

Grease a 12 cup muffin tin. Combine ingredients and mix until a soft dough forms (if your dough is too dry, add additional water one tablespoon at a time until it is moist). Drop the dough by heaping tablespoon fulls into each cup your muffin tin. Grease your fingers, then gently press the dough onto the bottom and up the sides of each cup to form the crust. Set aside.


For the filling:
1/3c Homemade "Cream of" Soup Mix
1c Thrive FD Chicken
3T Thrive Potato Chunks
2T Thrive Green Peas
2T Thrive Celery
2T Thrive Green Beans
2T Thrive Corn
1T Thrive Onions
1T Thrive Carrots
2c Cold Water
1t Italian Seasonings
1/3c Thrive FD Mozzarella Cheese (not rehydrated)*

Preheat oven to 350. Combine all ingredients, except the cheese, in a medium pot. Stir well and bring to a boil. Reduce heat and simmer, stirring frequently, until vegetables are tender and sauce has thickened. Spoon filling into pie crusts, top each with about half a tablespoon of mozzarella cheese, and bake for 18-20 minutes or until crusts are golden brown. Cool slightly before serving.

*Using the cheese as-is makes a great, crispy topping similar to a breadcrumb topping but with the great flavor of Thrive Mozzarella. If you would prefer, rehydrate the cheese before sprinkling it on top of the pies and it will melt in the oven.

Pumpkin Walnut Breakfast Cake

The ever versatile Thrive 6 Grain Pancake Mix strikes again in this delicious breakfast cake. Spend five minutes putting this recipe together, then pop it in a hot oven before you jump in the shower. It will be ready to serve by the time you're done applying your makeup :)


1-1/2c Thrive 6 Grain Pancake Mix
1c Milk
2/3c Pureed Pumpkin
1/2c Applesauce (or butter, or coconut oil)
1/2c Chopped Walnuts
2T Thrive Whole Egg Powder
2t Ground Cinnamon
1/4t Ground Nutmeg
Dash Ground Cloves

Preheat the oven to 350 and grease a pie plate. Combine all ingredients and mix well. Pour into greased pie plate and bake for 40 minutes. Allow to cool slightly before serving.

Pumpkin Spice Pancakes

First, an apology. I took a new job about six weeks ago and have been working a ot of hours. I love my job, and I love this blog, and I love my family. Please be patient with me while I get it all figured out :)


This new pancake recipe is a great way to start a lazy weekend morning! Serve them with melted butter and syrup, or make a beautiful pumpkin glaze.

1c Thrive 6 Grain Pancake Mix
2/3c Milk
1/4c Pureed Pumpkin
3T Thrive Brown Sugar
1/4t Pumpkin Pie Spice Mix

Combine all ingredients and mix gently until smooth. Heat a large, greased skillet over medium heat. Use a small ladel to pour batter onto skillet, making 6" rounds. Cook until edges dry, then flip and cook another minute or two. Makes 9 pancakes.

Pumpkin Glaze

1c Thrive Powdered Sugar
1-2T Milk
2t Pureed Pumpkin

Stir until combined and drizzle over cooked pancakes.

Almost Instant Chocolate Cake

Two ingredients, two minutes, one delicious cake. Yes, it really is that simple.


2T Thrive 6 Grain Pancake Mix
2T Thrive Brownie Mix
2T Water

Combine all ingredients and stir well. Pour into a greased ramekin, coffee mug or other microwave safe container. Microwave for 1 minute 15 seconds.

That's it. Seriously.

Now, if you feel like investing just a few more seconds you could add something to the batter before microwaving it . . .

Thrive Macaroon Cookie Mix
Thrive FD Raspberries
Thrive FD Strawberries
Thrive FD Banana Slices
Chocolate Chips
Peanut Butter
Chopped Nuts
Marshmallows
Flavored Extracts (vanilla, coconut, almond, etc)

You can eat your cake as-is, or top it with . . .

Powdered Sugar
Whipped Cream
Peanut Butter
Chocolate Sauce
Caramel Sauce
Marshmallow Fluff
Frosting
Quick Raspberry Sauce - combine 1/4c Thrive FD Raspberries with 2T water and a sprinkle of sugar. Smash with a fork.

Mini Strawberry Colada Cupcakes

 
1c Thrive Brownie Mix
1c Thrive 6 Grain Pancake Mix
2/3c Milk
1c Thrive FD Strawberries
1c Thrive Macaroon Cookie Mix
1/4c Water

Preheat oven to 350 and grease mini muffin tins. In a bowl, combine brownie mix, pancake mix and milk. In a seperate bowl, combine strawberries, macaroon cookie mix and water. Fill each muffin cup halfway with brownie batter, then put about a teaspoon of the cookie mix in the middle. Bake at 350 for 15 minutes. Cool before frosting.

Pink Frosting

1/2c Vanilla Frosting
1/4c Thrive FD Strawberry powder (from the bottom of the can)

Mix well and put in a plastic sandwich bag. Snip off the corner of the bag and pipe onto cooled cupcakes.

Crazy Cakes

I have excellent willpower at the grocery store. I can avoid the cookie aisle, the ice cream section and the bakery with ease. Unfortunately that means that when I am really in the mood for something sweet, I'm basically out of luck. Last night I was desperate. I needed something with chocolate and peanut butter - but we were out of peanut butter. My solution to this problem was rather creative if I do say so myself!

The downside to baking late at night is that I'm forced to take pictures in my kitchen, which isn't exactly lit for professional food photography.  So I'm left with a picture that looks like it belongs on a box of cake mix in the 1970s. Sorry about that. The cake really is good, promise!



1c Thrive 6 Grain Pancake Mix
1c Reeces Puffs Cereal, crushed
1/3c Chocolate Chips
1/4c Shredded Coconut
2T Chopped Nuts (I used walnuts)
1/2c Milk

Preheat your oven to 350 degrees and grease your choice of baking dishes. I used two small crocks, but ramekins, muffin cups or a small cake pan would all work just as well.

In a bowl, combine all of the ingredients and stir well. You may need to add more milk to get a smooth batter. Pour into greased baking dish and bake for 25 minutes or until a toothpick inserted in the center comes out clean. Top with frosting, whipped cream, or nothing at all.

If you don't have Reeces Puffs cereal, you could substitute Cocoa Puffs, Cinnamon Toast Crunch, Cookie Crisp or even Peanut Butter Cap'n Crunch. Feel free to be creative here :)

Pigs in a Blanket Pie

When I told my daughter we were having this for dinner, she said "Genius, Mom!" Pair it with a fresh fruit salad and you can be a genius, too.


1 1/2c Thrive 6 Grain Pancake Mix
2T Thrive Whole Egg Powder
1c Water
6 Precooked Sausage Links*

Preheat your oven to 350 degrees and grease a pie plate. In a medium sized bowl, combine pancake mix, egg powder and water. Pour into greased pie plate and arrange sausage links on top. Bake for 20 minutes or until cake is golden brown. Serve with warm maple syrup.


* You could easily sub Thrive Sausage Crumbles or Sausage TVP - just rehydrate and mix into the pancake batter before baking.

Blueberry Do'Muffins

These are part blueberry muffin, part cinnamon and sugar doughnut hole, and 100% delicious! Using the Thrive 6 Grain Pancake Mix as a muffin base is a great shortcut, and rolling the hot mini muffins in cinnamon and sugar gives them a great doughnut hole appearance and flavor. They are full of whole grains and have a healthy dose of antioxidants from our blueberries, making these a great addition to your breakfast table.


2c Thrive 6 Grain Pancake Mix
1c Thrive Freeze Dried Blueberries
1/4c Toasted Coconut (optional)
1 1/3c Water

1/2c Thrive White Sugar
3T Ground Cinnamon

Preheat oven to 350 degrees and grease a mini muffin tin (a mini donut tin would be even better!). Combine pancake mix, blueberries, coconut and water. Spoon into greased muffin cups. Bake at 350 degrees for 15-18 minutes or until toothpick inserted into the center of the muffin comes out clean.

While the muffins are baking, stir the sugar and cinnamon together in a shallow bowl. Roll the hot muffins in the sugar mixture, coating evenly on all sides. Store leftovers in an airtight container.

Makes approx. 30 mini muffins.
