Chocolate Pie with Macaroon Crust

Words I would use to describe this pie: amazing, delicious, silky, decadent, indulgent, rich, luxurious. Words I would not use to describe this pie: healthy, low fat, low sugar, low calorie. But it is fantastic. Just be sure to share :)


For crust:
2c Thrive Macaroon Cookie Mix
1/2c Thrive Quick Oats
1/4c + 1T Hot Water

Preheat your oven to 375 and grease a pie plate (I used real butter on this one). Combine the cookie mix, oats and water in a bowl and stir until combined. Press into the pie plate and up the sides to form the crust. Bake for 15 minutes and allow to cool completely.

For filling:
1 Package Instant Chocolate Pudding Mix
1/2c Thrive Brownie Mix
1-1/2c Cold Milk

Combine these ingredients and mix until no lumps remain. Pour into the cooled pie crust and refrigerate for 1 hour. Top with fresh whipped cream, chocolate shavings, toasted coconut, or nothing at all!

Mini Strawberry Colada Cupcakes

 
1c Thrive Brownie Mix
1c Thrive 6 Grain Pancake Mix
2/3c Milk
1c Thrive FD Strawberries
1c Thrive Macaroon Cookie Mix
1/4c Water

Preheat oven to 350 and grease mini muffin tins. In a bowl, combine brownie mix, pancake mix and milk. In a seperate bowl, combine strawberries, macaroon cookie mix and water. Fill each muffin cup halfway with brownie batter, then put about a teaspoon of the cookie mix in the middle. Bake at 350 for 15 minutes. Cool before frosting.

Pink Frosting

1/2c Vanilla Frosting
1/4c Thrive FD Strawberry powder (from the bottom of the can)

Mix well and put in a plastic sandwich bag. Snip off the corner of the bag and pipe onto cooled cupcakes.

Macaroon Breakfast Rolls

This surprising combination would be perfect served with a nice fruit salad at your next brunch!


1c Warm Milk
1/4c Thrive Brown Sugar
1 Packet Yeast
3c Thrive Flour (White, Whole Wheat or a Combination)
1T Thrive Egg Powder
1/2t Salt
1/2c Butter or Coconut Oil, melted and cooled slightly

Dissolve sugar and yeast in warm water and set aside to proof for 5 minutes. While yeast is proofing, melt the butter or oil and allow to rest on counter. Combine flour, egg powder and salt. Add milk mixutre and oil or butter and stir. When the dough becomes too thick to mix, turn it out onto a floured counter and knead for 5 minutes. Cover with a damp towel to rest. Preheat oven to 350.

2c Thrive Macaroon Cookie Mix
1/4c Hot Water

Combine cookie mix and water and mix well. The mixture should be fairly moist - add additional hot water if necessary. Allow mixture to rest for 5 minutes.

Roll out the dough to make a long rectangle. Spread the macaroon cookie mixture, leaving about 1" dry all the way around the dough. Sprinkle cookie mix with toppings if you would like to - white chocolate chips, cinnamon, chopped nuts or even sprinkles would all be nice additions. Roll dough to make a long round, then slice into 1-1/2" rounds. Place is greased baking dish and bake at 350 for 30 minutes or until golden brown.

Tropical Morning Muffins & A Giveaway!

Start your morning right with a hefty dose of vitamins, minerals and deliciousness! These muffins are great with a hot cup of coffee or tea, or even a tall glass of ice cold milk. I like to add a couple of tablespoons of ground flax seed to my muffin recipes - it adds a nice, nutty flavor, as well as all those good essential oils, fiber and omega-3s. If ground flax isn't your thing, feel free to leave it out.


1c Thrive White or Whole Wheat Flour
1/4c Thrive White Sugar
1T Thrive Whole Egg Powder
1t Thrive Baking Powder
1/4t Thrive Baking Soda
1/4t Thrive Salt
2T Ground Flax Seed (optional)
1/3c Applesauce
1c Water
1/2c Thrive Pineapple Chunks
1/4c Thrive Mangoes
1/4c Thrive Banana Slices
1/4c Thrive Maroon Cookie Mix
Shredded Coconut (for garnish)

Preheat oven to 350 and grease a 12 cup muffin tin. Combine flour, sugar, egg powder, baking powder, baking soda and salt. Stir well to combine. Add water and applesauce and mix well. Gently fold in fruits and cookie mix. Pour 1/4c of the batter into each of 12 greased muffin cups. Sprinkle with shredded coconut, lightly pressing the coconut into the batter to help it stick. Bake the muffins at 350 for 18-22 minutes or until lightly browned.
